MANGO CILANTRO MOCKARITA

Mango Cilantro Mocktail

Serves 2

Fresh, sweet and delicious – cha cha cha!

INGREDIENTS:

1 ripe mango, pitted, peeled, chopped

1/2 cup fresh cilantro leaves

1/2 cup fresh squeezed orange juice

Juice of 3 large limes 

1 Tbsp jalapeño-infused simple syrup (optional)

2 cups ice cubes, divided

GARNISH:

Fresh cilantro sprigs

Himalayan sea salt

METHOD:

Rub cut lime around rim of glasses and dust with sea salt or Tagin seasoning for a spicy kick.

Combine mango and cilantro leaves in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix in orange juice, lime juice, and simple syrup, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Divide remaining ice between 2 rocks glasses and pour Mockarita mixture over. Garnish with cilantro sprigs and a lime slice.

You can also throw this recipe into the blender for an even yummier treat!

JALAPENO-INFUSED SIMPLE SYRUP:

Bring 1 cup of water to a simmer and add natural, low-glycemic sweetener of choice (stevia, monk fruit, allulose or xylitol), stirring gently until dissolved and add 2-4 jalapeño slices.  Remove from heat, let cool and strain out jalapeño slices.  Make sure and check proportions for the sweetener you use.  Store in a jar with a tight-fitting lid and refrigerate for up to 2 weeks.

Make it boozy:  Just add a splash of your favorite tequila to give it a light boozy buzz.
