EXTREME WELLNESS BREAKFAST

You can thank my amazingly awesome and youthful (he just turned 90!!) cousin Dessouky for this gem of a breakfast recipe.  He starts most of his mornings with this and well…that’s good enough for me!

The original recipe is called Egyptian Breakfast Ful Medames and includes hardboiled eggs.  You can certainly add them if you wish but if you are looking to take a break from them, it works just as well without them.  I’ve also eliminated the pita bread from the original recipe but you can include a small amount of whole grain pita or 1/2 a whole grain gluten-free wrap if desired – Enjoy!!  Serves 4

INGREDIENTS:

2 organic, pasture-raised eggs (optional)

2 Tbsp olive oil

1 small sweet onion

1/2 tsp cumin powder

1 14-ounce can of ful mesdames beans (fava beans), drained and rinsed

1/2 cup cold water

1 tomato, diced

2 Tbsp fresh lemon juice

1 tsp sea salt

2 tsp fresh parsley, chopped

1/2 cup tahini

1/3 cup water

1.5 Tbsp lemon juice

1 clove garlic, minced

sea salt to taste

3 Tbsp hemp hearts (optional and can be found online – I LOVE these)

Aleppo pepper to taste (optional and can be found online)

GARNISH:

2 medium tomatoes, diced

1 small cucumber, diced

METHOD:

In a medium sauté pan, cook 1/2 the onion and cumin powder in olive oil for 3 minutes.  Add the fava beans and cold water and bring to a boil.  Simmer for 1 minute and then crush the beans with a potato masher.

Add the remaining onion, tomato, lemon juice and sea salt and simmer for 2 minutes.  Remove from heat and stir in fresh chopped parsley.  This can be made ahead and kept in the fridge for up to 4 days.

Tahini Sauce:  Whisk together the tahini, water, lemon juice, minced garlic and sea salt.  This can be made ahead or bought premade.

To serve: drizzle the tahini sauce over the cooked fava bean mixture and sprinkle with hemp hearts and Aleppo pepper (optional).  Garnish with chopped tomatoes and cucumbers.  Enjoy!!
