A Celebration In A Glass!!
1/2 cup blueberries
8 strawberries, cut in half lengthwise
1 apple, peeled and cut into 1/4-inch slices
1/2 small lemon, juiced (1 Tbsp)
2 Tbsp Ginger simple syrup (see recipe below)
Sparkling mineral water or seltzer
Make as many stars as possible from your apple slices with a star-shaped cookie cutter. Divide apples, blueberries, and strawberries among 2 iced glasses. Add 1/2 Tbsp lemon juice and 1 Tbsp Ginger Simple Syrup to each glass. Fill each glass with sparkling water and stir. Adjust sweetness if needed.
GINGER SIMPLE SYRUP:
1/2 cup filtered water
1/2 cup monk fruit powder
1 Tbsp grated fresh ginger
In a small pot, combine water and monk fruit powder and boil, stirring continuously until monk fruit powder has dissolved. Turn off the heat and add ginger. Let cool completely, strain out the ginger, and store in a small glass container with a tight-fitting lid in the refrigerator. I will keep it for two weeks.
