LEMONY SHEET PAN SALMON & ASPARAGUS

In the spirit of keeping things “simple and grounding”, this Sheet-Pan Salmon & Asparagus recipe is not only delicious, it’s a total weeknight lifesaver. No piles of dishes, no stress.

INGREDIENTS:

2 wild salmon fillets

1 bunch of asparagus (break off stalk bottoms)

2 large shallots (peeled and quartered)

2 tbsp extra virgin olive oil 

1 large lemon (zested and sliced)

1 head of garlic (top sliced off)

Pinch of sea salt & freshly ground pepper

METHOD:

Preheat oven to 400 degrees F. Prepare a large sheet pan with parchment paper. Toss the asparagus, shallots, lemon zest and garlic in olive oil and coat well. Throw it all on the sheet pan with the salmon fillets and sprinkle with sea salt and pepper. Top with lemon slices and roast for about 12-15 minutes until the salmon flakes, asparagus is roasted, and the shallots and garlic are tender and sweet.
