INGREDIENTS:
2 heirloom tomatoes, sliced
2 peaches, sliced
1 small cucumber, thinly sliced
1/4 small red onion, very thinly sliced
Handful of fresh basil leaves
Optional: crumbled goat or feta cheese, chopped pistachios
BASIL-LIME VINAIGRETTE:
Juice of 1 lime
1 Tbsp apple cider vinegar
2 Tbsp extra-virgin olive oil
1 tsp raw, organic local honey
1 Tbsp Dijon mustard
Sea salt & freshly ground pepper, to taste
1 Tbsp finely chopped fresh basil
METHOD:
Gently layer the tomatoes, peaches, cucumber, and onion on a platter. Whisk all vinaigrette ingredients together until emulsified. Drizzle over salad before serving. Top with basil, cheese and/or pistachio nuts for extra flavor and texture.
