Mojo Madness Cocktail
A Spicy watermelon-infused concoction

INGREDIENTS:

  • 1 cup Fresh-pressed watermelon juice
  • 1/2 freshly-squeezed lime
  • 1 shot good-quality tequila blanco
  • 1 tsp St. Germain (elderflower liquor)
  • 1 tsp chopped jalapeño pepper
  • Tajin spice for rimming
  • Lime slices for garnish
  • Jalapeño slices for garnish

METHOD:

In a cocktail shaker, muddle jalapeño pepper and lime juice. Add ice, watermelon juice, tequila and St. Germain and shake. Rim cocktail glass with Tajin spice and fill with ice. Strain watermelon mixture into glass and garnish with lime slice and jalapeño if desired. For a mocktail just eliminate the tequila and St. Germain and add club soda.

The Endless Highway Cocktail

This was inspired by my 14 hour drive (both ways) on mostly 2 lane highways surrounded by trucks!!!

 

 

INGREDIENTS:

1 oz. (or 2) Tito’s Vodka (gluten-free)

Trader Joe’s Citrus Zest Mineral water (to taste)

1 large slice of orange

Ice

METHOD:

In a large wine goblet (feels more special) pour vodka over ice.  Add mineral water to your taste.  Squeeze orange slice into glass and drop in.  Very refreshing and totally hits the spot!

 

Mango Cilantro Margarita

Mango cilantro Margarita

First things first.  There’s nothing like a margarita and let me tell you people this one is delish!!!  I’ll admit it may sound a little weird, but if you are a cilantro-lover like me they are definitely worth a try.  The mango gives this drink a really smooth texture and the cilantro gives off a little spicy kick.  I had one of these in The Hamptons last summer and I have been enjoying them ever since – in moderation of course ; )

The ingredients:

1/2 small mango, pitted, peeled, chopped

1/4 cup fresh cilantro leaves

1/2 cup 100% blue agave silver tequila

3 tablespoons fresh lime juice

1 tablespoon Cointreau or other orange liqueur

1 T agave nectar (optional)

2 cups ice cubes, divided

Fresh cilantro sprigs for garnish

Directions:

Combine mango and cilantro leaves in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix in tequila, lime juice, agave nectar and Cointreau, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Divide remaining ice between 2 tall glasses. Pour Margarita mixture over. Garnish with cilantro sprigs.

You can also throw this recipe into the blender for an even yummier treat!
